I had a zucchini to use up, so I only stuffed one big one and had a bunch of yummy filling left over, but you can adjust the ingredients to how many zucchini's you have to fill depending on how many you have to feed. Great for lunch/dinner or appetizers! If paleo, or dairy-free diet, skip the cheese!
organic zucchinis
1lb/16oz bison (can sub grass-fed beef or venison too!)
coconut oil
1 large yellow onion
1 tbsp garlic powder
1/2 tsp sea salt (maybe more, add to taste)
organic shredded cheddar cheese
(if you're within range of a Trader Joe's get the raw NY Yellow cheddar cheese and shred it!)
can adjust this recipe to how many you want to make by adding less meat
Clean zucchini's, cut off ends and slice down the middle. Carve out the middle with a spoon. (Can chop up middle finely and add it in, or toss it, or add it to another dish... I didn't use it for stuffing the zucchini but I had extra, so after I stuffed the zucch I cooked the left over zucch in the meat and saved that...not sure what I'm gonna do with it but it's delicious as is too!) Peel and dice the onion and throw in it a teflon-free (stainless steel, or thermolon/green pan) with a spoonful or two of coconut oil (or organic butter), cook until translucent and slightly golden. Add in bison meat and break down into small chunks... cook until brown. Add in garlic powder and sea salt and allow to cook a little longer. Place zuccini boats on a cookie sheet and spoon meat filling into the boats. Shed or sprinkle cheddar cheese on top and bake on 350 until zucchini is tender. Enjoy! :)
