It happened again. I went to visit my brother's gf to have dinner and ended up whipping up random smorgasbord of deliciousness in the kitchen... ended up being mostly a long list of desserts and lots of hummus haha :) which was completely ok with me. After a long list of brainstorms, a couple high fives, and burnt thin mint crust that was at one point going to be a base for an ice cream cake, then mini chocolate mousse cups with thin mint crust, then just a mousse filled tart, then we didn't have chia seeds so we were going to move the vanilla cheesecake filling for the normal crust to the chocolate crust and use up her apples and make an apple pie with snicker doodle ice cream.... then I burnt the thin mint cookie crust and tasted both the fillings together and VOILA! a mouth watering masterpiece :)
PIE CRUST:
2 cups blanched almond flour
1/3 cup xylitol
1 stick organic butter
Mix almond flour and xylitol together, melt butter down on the stove and pour over. Mix together and press into a greased pie pan (greese with butter, coconut oil, or coconut oil spray.. check ingredients). Bake at 350 until firmed up and LIGHTLY golden...but not too golden because it will cook a little longer with the filling.
FILLING1: (Vanilla Cheesecake)
6-8oz organic cream cheese
3 hormone free eggs
1tbsp pure vanilla extract (no sugar added, check label)
With a hand mixer, cream together the cream cheese and xylitol. Once smoothed together, beat in one egg at a time until smooth and fluffy. Blend in vanilla extract. Store in refrigerator.
FILLING2: (Apple Pie)
6 organic granny smith apples, peeled and cut
xylitol
cinnamon
butter or coconut oil
Clean, peel and cut all apples up. Place them in a med-large frying pan, with a dash of water... place on high with a lid over and allow to simmer until softened. Once softened and the water has evaporated, add in 2-4 tbsps of butter or coconut oil, cinnamon and xylitol to taste.
DIRECTIONS:
Once you have made each filling, allow them to both cool, for best results, and then fold apples into cheesecake filling. If you don't want to wait for it to cool, it wont make that huge of a difference. Pour batter into the crust and place back in the oven at 350 until cheesecake has slightly firmed. About

doesn't neeeeed a topping, but you can throw some sugar free vanilla coconut milk icecream on it, orrrrrr make your own if you have an icecream machine! to make snicker doodle icecream just add in cinnamon and xylitol with your typical bases (organic heavy cream or coconut milk, flavoring (vanilla), eggs, and salt... i don't have measurements, because Sam has been making the ice creams but you can find a bunch of variations online @ marianutrition.com ooor look up regular ones and sub ingredients)
