Bison Stuffed Zucchini Boats

I had a zucchini to use up, so I only stuffed one big one and had a bunch of yummy filling left over, but you can adjust the ingredients to how many zucchini's you have to fill depending on how many you have to feed. Great for lunch/dinner or appetizers! If paleo, or dairy-free diet, skip the cheese!




organic zucchinis
1lb/16oz bison (can sub grass-fed beef or venison too!)
coconut oil
1 large yellow onion
1 tbsp garlic powder
1/2 tsp sea salt (maybe more, add to taste)
organic shredded cheddar cheese
(if you're within range of a Trader Joe's get the raw NY Yellow cheddar cheese and shred it!)

can adjust this recipe to how many you want to make by adding less meat

Clean zucchini's, cut off ends and slice down the middle. Carve out the middle with a spoon. (Can chop up middle finely and add it in, or toss it, or add it to another dish... I didn't use it for stuffing the zucchini but I had extra, so after I stuffed the zucch I cooked the left over zucch in the meat and saved that...not sure what I'm gonna do with it but it's delicious as is too!) Peel and dice the onion and throw in it a teflon-free (stainless steel, or thermolon/green pan) with a spoonful or two of coconut oil (or organic butter), cook until translucent and slightly golden. Add in bison meat and break down into small chunks... cook until brown. Add in garlic powder and sea salt and allow to cook a little longer. Place zuccini boats on a cookie sheet and spoon meat filling into the boats. Shed or sprinkle cheddar cheese on top and bake on 350 until zucchini is tender. Enjoy! :)

Healthified Taco Shells!

It has come to the point where I have a self-admitted problem. I am a Chipotle fiend. I'm not even ashamed. So what? I may or may not know the staff by name, I have an app on my phone, get extra guac because they like me... if they had a fan club... I'd join. That being said, it wasn't easy for me to shoot down Chipotle tonight, after being tempted all day by my roommate. Time and money were not on my side, and I have a lot of beef to use up thanks to Vineyard Farms!  I could eat chipotle salads every day of my life and not get sick of it, my roommate salivates for their tacos...So I decided to make us healthy tacos here. If only I could master the barbacoa. Someday.




SHELLS:
1/3 cup blanched almond flour
1/3 cup Jay Robb unflavored whey protein 
1/3 cup Parmesan cheese
1 tsp Celtic sea salt
Water (just enough to hold dough together)
Optional: Mexican spices
You'll need parchment paper & either olive oil, grapeseed oil, or butter

RECOMMENDED FILLINGS: 
--> grass fed beef (GA readers, support local! 100% grass fed beef  http://vineyardfarms.blogspot.com/ )
(I avoid the MSG filled seasoning packets and use garlic powder, ground oregano, chili powder, ground cumin, sea salt, pepper, cayenne pepper & onion powder)
--> raw cheese
--> organic shredded lettuce
--> avacado or guacamole
--> olives
--> tomato or salsa
---> organic sour cream--> cilantro
--> hot sauce


Preheat oven to 350. Blend all dry ingredients together, slowly add a little bit of water at a time until you can make it into a dough with your fingers. Grease 2 large pieces of parchment paper. Make dough into about 1-1.5 inch balls, roll tightly. Cover with the additional sheet of parchment paper and roll dough using a rolling pin to about 1/16th inch thick circles.Remove the top piece of parchment. Place the bottom parchment (with the rolled out dough) onto a cookie sheet, repeat with remaining dough. 

Place cookie sheet in oven and bake for 5 minutes. Remove from oven, form into a taco shell, the dough will be pliable. Place back into oven for 8-10 more minutes or until golden brown. Remove from oven to completely cool. Makes 4 servings.

Quick & Easy Venison Chili!

Mmmm! :) Thanks to my Uncle Mark, we had plenty of deer meat to use up this week! I'm back up North for a few weeks and looking for any excuse to stay warm, so a hot bowl of chili didn't seem like a bad idea in the least :) I'm also on a much needed break, and don't really want to cook or do anything... this is so quick and so easy to make... and it's healthy and delish.  You can also use grass-fed beef instead if you don't have access to deer meat.



WHAT YOU'LL NEED:
1lb ground deer meat
1 yellow onion
28 oz can vegetarian beans
16 oz jar salsa
1 teaspoon chili powder (I'm a wuss, 1-2 tablespoons if you like it spicy)
1 teaspoon garlic salt
optional: raw cheddar cheese

INSTRUCTIONS:
Chop onion and put in small sauce pan or frying pan with meat, cook until brown. (Can double or triple the batch if feeding more or making it for the week and just use a bigger sauce pan) Once brown, drain fat if necessary (if using beef), then stir in beans, salsa and spices. Allow to simmer and heat through.

Optional: Shred raw cheddar cheese on top & enjoy! :)

Like NaNa's Homemade Sauce & Meatballs


What would a healthified comfort food blog be without home cooked sauce and meatballs? Back home, we're famously known for our our sauce and meatballs so for me, and most of my family nothing is more comfort food than that. I owe a lot of my love and pride for food, cooking and feeding people I care for to my NaNa. To us, and our culture, feeding people is a hands on way of showing your love. My NaNa was one of those people so rare, so special that she just left people in awe. She had a way about her like nothing I have ever seen, and her love was so powerful and infectious that she lit up everyone she knew. She herself strengthened us all, and we all harbored a comfort in her that was unexplainable. She was the most incredible person I've ever been blessed enough to know and learn from, not to mention a cook like you can only dream of. It always amazed me how she could make a meal out of anything, and it was always so delicious. Much of her love was shown through making sure we were all fed, fed a lot and fed well. To this day no person has had as big of a hold and impact on me and my life as she has and not a day goes by I don't think of her and whole heartedly miss her. Nine years ago today, my life was forever changed. It is with great love and pride and a new fueled passion for health and healing I dedicate today and the rest of my life to helping people prevent such devastating diseases like cancer.RIP my NaNa, love and miss you with all my heart.


Sauce:
1/2 Onion
Olive Oil
Mild Italian Chicken Sausage (or any kind of sausage that's not pork based and has no nitrates)
2 28oz Cans of Organic Kitchen Ready Ground Peeled Tomatoes
4 6oz cans Organic Tomato Paste
4-6 cloves of Garlic
1/2 tsp Black Pepper
1/2 tsp Sea Salt
2 tablespoons minced garlic

Instructions: 
Coat the bottom of a sauce pan (stock pot) with olive oil on low heat. Cut half of an onion in half and instead of salt pork place however many sausage links you want to flavor it (3-6), and your garlic cloves in the bottom. Allow time for the ingredients to brown up and catch. As they are browning, add salt and pepper. Once the garlic has softened, you can mash it down with a fork if desired. 
Before adding the tomato in, you can either remove the garlic or leave it in. Open and add in both cans of kitchen ready ground peeled tomatoes. Fill one of the emptied cans with purified water and add into the pan. Stir and bring to a slow boil, not changing from low heat. Once the acid is boiled out (you'll see a lighter collection at the top of the sauce as shown below), add in your tomato paste. Fill up two of those cans with purified water and add to the sauce. Add two heaping spoonfuls of minced garlic. Continue to stir occasionally for about an hour until cooked through, making sure it doesn't catch and burn on bottom.


Meatballs
1lb of Ground Grass-fed beef or Natural Ground Turkey
Parmesan Cheese 
Dried Parsley
2 Vegetarian Fed Eggs
Minced Garlic

Optional:
almond flour & italian seasonings

I did this two ways, both were good but I prefer the just cheese one.

Meatballs without bread crumbs:In a medium or large mixing bowl place 1lb of meat down. On each side, add in parmesan cheese to a little over the thickness of the meat, generosity can never go wrong when it's cheese ;). Take about one or two handfuls of dried parsley and crush it in your hand as you sprinkle it over the mix. Scoop two tablespoons of minced garlic, and do the same, making sure to spread out evenly. Crack and add two eggs. If you want, you can sprinkle with a little garlic salt, but not really necessary. Mix with hands until evenly distributed. Roll into meatballs and drizzle with olive oil and bake at 350, or fry in coconut or grapeseed oil.





Meatballs with home made "bread crumbs":In my taste testing, the ones above were preffered but both were delicious. If you don't like the idea of meatballs without bread crumbs, try this. In a medium or large mixing bowl place 1lb of meat down. Pasta options:
-With a spiraler, grater or carrot peeler cut zucchini into pasta strands, cover in sauce, meat balls, sausage and parm cheese. Surprisingly accurate pasta substitute, very delicious!

Why not pasta? Pasta, even wheat pasta turns directly into sugar in your mouth within seconds. Sugar is like throwing gasoline on a fire when it comes to cancer, and everyone has cancer cells in their body so the more exposure to sugar and carbs, the more you are spreading and growing those cancer cells. Sugar is also the primary cause of obesity, dibetes and at the root of nearly every disease because it is inflammatory and makes the body acidic, all disease thrives in acidic conditions. Good news is, this alternative is super delicious and satisfying, my best friend didn't even know the difference. You can make chicken as a base too, see instructions below and look out for an upcoming chicken parm recipe :)


















Chicken: Cut hormone free, vegetarian fed chicken breasts thinly. Whip a few eggs with salt and pepper. Season almond flour with garlic powder, onion powder, parsley, salt and pepper. Dip chicken in egg then bread in almond flour, bake or fry in coconut or grapeseed oil. Serve with sauce over it and melted motzerella for a quick healthy chicken parm!

Tossed Taco Salad



1 tablespoon coconut oil or grapeseed oil
1/2 yellow onion, grated1 pound ground organic turkey, bison, grass fed beef, or shredded chicken
2 teaspoons garlic powder
2 teaspoons ground oregano
2 teaspoons chili powder
2 teaspoons ground cumin1/2 teaspoon cayenne pepper (more if you'd like it spicy)
1 teaspoon sea salt
1 teaspoon onion powder
1 Avocado2 Heads Romaine Lettuce
1 Cup organic sour cream (raw if possible)
1.5 Cups of salsa (no sugar added)
1 Can sliced black olives
1-1.5 Cups Shredded Raw Cheddar
1/2 Red onion, chopped

Heat coconut oil in a stainless steel or thermolon frying pan. Grate 1/2 a yellow onion into frying pan with 1lb of your choice of meat. Mix all spices together in a bowl and add to meat. In a food processor pulse 1 avocado and 1 cup of sour cream until smooth. Once blended, add 1.5 cups of salsa. Shred 2 heads of romaine lettuce, or chop finely. Drain 1 can of olives, slice if necessary. Grate about 1-1.5 cups of raw cheese. Chop 1/2 red onion finely. Fold all ingredients together in a large bowl and enjoy :) Approx 6 servings. If you want to save for the next day, squeeze some lime or lemon juice and mix in to stop the the avocado from enzymatic browning.

Cheesy Spinach Buffalo Burgers :)


INGREDIENTS

16oz Bison
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Black Pepper
1/2 tsp Sea or Himalayan Salt
1.5 Cups Organic Spinach
1/2 Cup Raw Cheddar Cheese (shredded)
grapeseed oil (if cooking inside on stove)
* see suggested toppings below



INSTRUCTIONS
Steam 1.5 cups of spinach, drain, pat dry with paper towel and chop. In a medium sized bowl, mix bison with spices until evenly distributed. Hands work best, but I may be partial due to an impressive meatball mixing background. Once the spices are blended evenly, fold in 1/2 cup of shredded raw cheddar cheese and chopped spinach. Form into patties and throw on the grill or fry on stove top in grapeseed oil and cook to desired tenderness. Once cooked, sprinkle lightly with himalayan or sea salt and dress it how you wish. Makes 6 Burgers. Enjoy :)
