So last weekend I went out to a birthday breakfast at Highland Bakery and had the most amazing french toast. It was thick challah bread with french cream, fresh berries and a brown sugar butter... this is as close as I could come to it :) There are two different ways you can make it, with the french toast bread OR it's also really good, maybe even better with the angel food cake recipe. I tried to make coconut milk whip cream but got too impatient and just ate it without it which was still very yummy! Hope you enjoy!
French Toast Bread:
(If you're crunched for time I suggest you make this the night before because it's prep time + bake time is kind of long if you wake up hungry on a Sunday morning and don't wanna wait)
4 organic eggs, separated ( http://vineyardfarms.blogspot.com/ )
1 cup vanilla whey (I used Jay Robb, can get at whole foods or amazon)3 TBS Xylitol1
2 cup unsweetened almond milk
1 tsp nutmeg1 tsp vanilla (no sugar added, check the label)
Separate the eggs. Place the egg whites in the bowl of and beat to very stiff peaks. Slowly add the whey. Set aside.
In a large bowl, beat the egg yolks until they lighten in color. Gradually add the xylitol and continue to beat for 2 minutes. Add the almond milk, vanilla and nutmeg and stir to combine. Slowly stir the egg whites into the mixture.
Grease a bread loaf pan with coconut oil or organic butter. Place the mixture into the pan. Bake at 350 degrees for about 50 minutes. Cool completely and cut into 12 large pieces.
"HEALTHIFIED" ANGEL FOOD CAKE
18 egg whites (can find conversion for liquid egg whites)
2 tsp cream of tartar
1 pinch salt
1 cup Jay Robb vanilla whey protein
1 cup xylitol
1 tsp vanilla extract
Preheat oven to 350 degrees F. Sift whey protein and confectioners erythritol together and set aside. In a large clean bowl, whip egg whites with a pinch of salt until foamy (save the yolks for "healthified" creme brule, "healthified" coconut custard, OR "healthified" ice cream @ marianutrition.com). Add cream of tartar and continue to beat until very stiff (you will be able to put bowl upside down and the whites won't fall out). Add your favorite extract flavor. Quickly fold in whey mixture. Pour into a greased 10 inch tube pan. Bake at 350 degrees F for 45 minutes. Makes 14 servings.

French Toast Batter:
3-4 eggs
1/2 cup unsweetened almond milk
1 tsp vanilla
1 tsp nutmeg
1 loaf Eggnog Bread or Angel food cake
Cinnamon "Sugar" Glaze:
organic butter
xylitol
cinnamon
Place first 4 ingredients of batter in a bowl. Dip the slices of eggnog bread into the egg mixture, fry on both sides in coconut oil or organic butter until golden brown. Sprinkle organic berries on top. In a small pan melt butter, stir in xylitol and cinnamon and pour over toast.
