Chocolate Covered Strawberries!
INGREDIENTS:
Organic Strawberries
Simply Lite Chocolate Bars (dark, milk or both :))
butter or coconut oil
wax or parchment paper
optional: unsweetened shredded coconut, chopped nuts, whatever you want to roll it in
HOW TO:On med boil water in the bottom of a double boiler. Grease the top part of the double boiler with .5-1 tsp of butter or coconut oil, add desired base flavor chocolate, adjust bars depending on how many you're making. Two bars makes about anywhere from 10-18 strawberries depending on the size of berries and how thick the layer is you put on. Melt chocolate until smooth, dip strawberries, using a spoon if necessary to coat. If desired clean double boiler, add opposite flavored chocolate and drizzle on top or roll in coconut or nuts :) Place on wax or parchment paper and allow to cool. Refrigerate if necessary to prep.
want an even healthier option for the chocolate?
Pulverize xylitol in a magic bullet or coffee grinder until it's a fine powder. Melt butter or coconut oil, unsweetened bakers chocolate blend until smooth. Add a dash or two of cinnamon and xylitol to taste, dip place and cool same as above :)
