BBQ Chicken Pizza

FINALLY! healthy pizza that actually tastes amazing. This is by far top three of my favorite inventions I've made so far. I never used to be a big BBQ fan until I moved south and could smell it on every corner. Unfortunately, BBQ sauces are laden with syrups and all kind of other junk that have major health consequences, lets not even get into the health effects of flour doughs, even gluten free mixes. A  lot of people get tripped up on the "gluten-free" trend and think that means it's healthy. It's great to avoid gluten, a protein molecule that many people aren't able to digest. As many as 1 in every 7 people have a gluten intolerance, whether they've become aware to it or not, however many gluten-free mixes and products still have a lot of starchy sources and other ingredients that are best if avoided when possible. I've been looking for a good BBQ sauce recipe AND been trial and error-ing pizza crusts for a long time but never quite perfected it... thankfully mission accomplished today. I found Nature's Hollow BBQ sauce, sweetened with xylitol and decided to tweak my cracker recipe into a crust, I think I struck gold. Try it and let me know if you agree :)






2 cups blanched almond flour (measure it out, don't be fooled by the label on the Red Mill pack)
1 cup parmesan cheese
1 cup shredded raw cheddar (get the yellow raw cheddar block at Trader Joe's)
1/4-1/2 red onion
2 hormone free vegetarian fed chicken breast
Natures Hollow Sugar-Free Hickory Maple BBQ sauce
(natureshollow.com, amazon too but sometimes more expensive on amazon and this site has other xylitol sweetened condiments too!)
shredded mozerella
3 tbsp olive oil
1-2 tsp grapeseed oil
1 tsp italian seasoning (optional)



Makes 3 5-6 inch pizzas!

In a med-large bowl mix almond flour, parm cheese, Italian seasoning. Once blended add 4 tbsp of water and 3 tbsps of olive oil.. blend together until it all can stick into a dough in your hands.  If you have a pizza pan you can use your fingers to spread out the dough, about 1/4 inch thick. If you lost your pizza pan in the move, like me, shape dough into 3 pizzas on baking sheets. Cook dough for about 20 minutes on 350.

While dough cooks, chop chicken into small cubes and throw in a skillet with grapeseed oil over medium heat. While that cooks, slice red onion slices very thin. Allow chicken to slightly brown, when it does, add in your onion and allow onions to get tender. Turn off heat and glaze onions and chicken with BBQ sauce.

Take out dough and spread a light layer of BBQ sauce. Add your desired cheese and then layer your chicken and onions and throw back in the oven until cheese has melted :)
