Sweet Potato Skins

Are you guilty of peeling the skin of sweet potatoes and tossing them? You wont be after you try these :)





what you need:
sweet potatoes (desired amt)
grapeseed or olive oil
sea salt
parmesan cheese (can skip if dairy issues)

what to do:
Heat oven to 425. Using a sharp knife, cut of 1/8-1/4 inch thick skins from each potato. Reserve centers for any other sweet potato recipe (there are millions). Drizzle skins with olive oil in a bowl and mix together with hands to coat. Place on a baking sheet. Sprinkle with salt & cheese and bake until crispy.
