My brother is a self proclaimed grill master. He grills everything. Doesn't matter how cold it is out, raining, wind... whatever... can't stop him. Sooooooo we've been grilling everything this week and throwing together random recipes. Samantha & I wanted to make pizza, amongst other random stuff today so we decided might as well throw that on the grill too. We didn't plan on posting this recipe but it came out so good so here's the rough round up of what we did.
pizza crust
2 cups blanched almond flour
1 cup raw shredded cheddar cheese (yellow NY Trader Joe's kind)
1 cup parmesan cheese
1/2 cup hemp seeds
3-4 tablespoons olive oil
3-4 tablespoons water
( enough until it sticks together enough to press into a crust, not too much)
1 tsp sea salt
1 tsp garlic powder
(it was actually a grinder of sea salt and garlic flakes)
pizza sauce
1 can diced tomatoes
1.5 tablespoon oragano
1 tsp sea salt
1 tsp pepper
1/2 tsp minced garlic
1 tsp garlic powder
toppings
shredded raw white cheddar from Trader Joe's
chopped roasted red & yellow peppers
raw asiago + parmesan cheese flakes
garlic herb feta
sliced grilled chicken
(onion and spinach would have been a nice addition, we later decided :))
how to:
In a medium sized bowl, add all dry pizza ingredients together. Mix together, add olive oil then water until it can be held together enough to press into a crust. Grease a sheet pan with olive oil or grapeseed oil and press with fingers into the shape of a crust, bake at 350 until lightly golden and firm.
throw all the sauce ingredients in a food processor until smoothly blended. Spread over pizza once it comes out of the oven then add toppings and throw on the grill (We didn't use all of the sauce, so you can save some for another pizza later on in the week)
