Gluten-Free Vanilla Marshmalow Rice Crispy Treats!

I used to make home made rice crispy treats ALL the time in high school, and after being haunted by them or other sticky cereal bars at every airport shop I began to salivate and had to healthify them. This isn't necessarily a health food recipe, it's more of a "better than" recipe to dodge all the junk in typical rice crispy treats.  I don't eat a ton of grains, mostly due gluten factor. I have noticed how my body doesn't react well with gluten and how yucky I feel after. Most people, as many as one in every seven Americans have a gluten intolerance, whether they take notice to it or not. Many health consequences that can can come from ingesting gluten are things like depression, fatigue/low energy, digestive issues, osteoporosis, cancer, thyroid disorders, weight gain, to name a few. The New England Journal of Medicine actually listed 55 diseases that can be caused by eating gluten.  I went to a gluten seminar when I was in Georgia and learned that gluten can actually form scar tissue on your brain! Scary stuff.  Luckily, brown rice does not contain gluten :) There is a gluten-free craze going around lately, but lets because something is labled as"organic" doesn't mean healthy, the same goes for things labled "gluten-free. Processed food is still processed food, gluten or not and most often has damaged fats, sugars and other chemical toxins. Even pre-packaged gluten free flours are normally junk. That being said, it is best to be conscious of your intake and enjoy in moderation. I should've probably taken my own advice before devouring the entire pan of these :-P



what you need:
1 stick of organic butter (raw if possible
2 packs of La Nouba Sugar-Free Marshmallows
( get on amazon, comes in a 6 pack.. save some for s'mores this summer!)
1/2 back of organic brown rice cakes, crumbled
1 tsp Trader Joe's Vanilla Bourbon Extract

what to do:
In a medium sauce pan melt down butter on med heat. While that is melting, crumble up rice cakes into a medium sized bowl. Add marshmallows to the butter and stir til smooth, then add in vanilla. Transfer marshmallow sauce over brown rice and mix well. Transfer into a glass dish and allow to cool in the refridgerator... if you can wait that long :)

love peanut butter rice crispy treats?! Me too! And carbs are best when eaten with protein so spread a layer of natural peanut butter on top!
