Yikes! This DC schedule messed with my meals hard this week. I learned it's gonna start being all about preparation and quick, easy meals. When I was between moves without a kitchen on finals week, these were a quick, easy go to. Super versatile and filling. I did lettuce boats each with slab of hummus (made with olive oil), a couple slices each of nitrate free smoked turkey breast, raw cheddar, and usually salt and pepper.
